Mini Chocolate Bundt Cakes {recipe}

I was given some of my grandmothers darling little bundt cake pans, but I had never used them before (i think i was intimidated by having to wash them after they were baked).  Finally I got the nerve up and went through her recipes and found on that looked delicious.  And boy is it!

And don't worry - if you don't have mini bundt cake pans I'm sure cupcakes would be just as yummy.

Mini Chocolate Bundt Cakes


1/3 cup cocoa powder
about 1/3 cup hot water
1 cups sugar
1 cup unbleached all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup buttermilk
1 lightly beaten egg
1/4 cup sour cream
1/4 cup vegetable oil
2 tablespoons butter, melted
1/2 teaspoon pure vanilla extract
1/2 cup milk chocolate chips, melted

1. Spray pans with cooking oil and preheat oven to 350*
2. Combine the cocoa & hot water until smooth then set aside
3.  Combine sugar, flour, baking powder, baking soda, and salt.
4. Add in buttermilk, sour cream, oil, eggs, butter, and vanilla. Pour in cocoa powder and water mixture and mix everything to combine.
5. Add melted chocolate chips and mix until smooth
6. Use a spoon to fill each indentation about halfway with batter. Bake for 15-20 minutes.

Once they are cool you can drizzle with ganashe, sprinkle with powdered sugar, or just eat them with your fingers while still hot because they are so good!
